The Frantoio Oleario Cassese has been operating for four generations in the production of excellent quality extra virgin olive oil. It is in the territory of Villa Castelli, an area considered the Oil Capital of this vast area of Puglia, halfway between the South-West Murgia and the Upper Salento. The Cassese oil mill is characterized by the method of processing the product, which is based on the very tight and rigorously controlled timing between harvesting and cold pressing.
