Description
Corbezzolo (Arbutus unedo) is an evergreen tree, also called strawberry tree, considered a symbol of the united Italy for its green, white and red colours of leaves, flowers and fruits. It grows wild in the west Mediterranean area and its honey has a pungent smell and a characteristic bitter taste. Its flowering is on autumn when bees’ work is reducing and that’s why the production is limited. Sardegna is the main production area. Iconic product for honey lovers, its sensory profile well marries with bitter vegetables (e.g. artichokes) or by contrast with sweet and fatty cheeses. Someone consider it the perfect honey for coffee.
